Summer is truly here. I swapped ratatouille for a simpler recipe. Slice five medium yellow squash 1/4 inch thick. Dice a medium shallot. Saute shallot in 3T unsalted butter until soft add squash and cook until slightly limp. Season with salt and chopped dill. Good as a side with chicken but better on fresh buttered rye bread.

Yum. I was just going to use zucchini in a curry chicken hand pie today — maybe I’ll use a mix of other summer squashes (heh, squashes) instead!
